Farmers Market Salad

A tasty way to use Minnesota produce that is grown in abundance in the heat of the summer!


Ingredients:

  • 1 c. uncooked quinoa
  • 1 ½ c. sweet corn kernels
  • 2 c. chopped baby spinach
  • 1 c. chopped fresh basil
  • ¾ c. pitted kalamata olives
  • 5 green onions, finely chopped
  • 1 packet Good Seasons Italian dressing
  • ¼ c. vinegar (for Good Seasonings Italian dressing)
  • 3 T. water (for Good Seasonings Italian dressing)
  • ½ c. olive oil (for Good Seasonings Italian dressing)
  • Juice from 1 medium lemon
  • 8 oz goat cheese, crumbled
  • 1 ½ c. halved grape or cherry tomatoes
  • Salt and pepper to taste

Preparation Directions

  1. Rinse, cook and cool quinoa as directed on package.  Will be approximately 2 ¼  c.
  2. Mix dressing (Good Seasonings packet, vinegar, water and oil) and lemon juice.
  3. Mix quinoa, produce (except tomatoes) and dressing.  Salt and pepper to taste.
  4. Fold in goat cheese and tomatoes.
